Grandma’s Friday Favorites

Happy Friday, friends!  It’s Mother’s Day weekend which means we’ll be cooking and baking all the things. That’s how our family celebrates Mother’s Day anyways. Actually that’s how our family celebrates everything but I digress. I hope you get to give your mom an extra squeeze this weekend and if your mom is no longer on this side of heaven then I pray that you smile through your tears because of all the wonderful memories you have of her. Mom memories are often the very best kind of memories. In honor of my mom today’s post is all about coconut. Mom’s love of all things coconut is legendary and here are just a few things I think she would enjoy from the interwebs:

  • Life Love & Sugar’s Samoa Cookie Cake is something I would make mom and she would hide in the fridge so no one else could have a piece

  • Joy the Baker’s Coconut Crab Rice actually make me wish I had crab in my house so I could make it right now…for real

  • Smitten Kitchen’s Double Coconut Muffins are the perfect morning treat…which is code for ‘I’m going to have to make these for mom some morning’  🙂

  • Ms. Kitchen also created these little Coconut Milk Fudge pieces of heaven which might possibly be the best things ever. I’m not even kidding here…

  • I just discovered Cakespy’s Breakfast Nanaimo Bars and while they don’t look particularly breakfast-y, that won’t stop me

  • One of mom’s favorite things in the whole wide world is coconut shrimp…thank you Tracy, now I’m going to have to make these. Stat.

This picture makes me so happy mostly because I know Grandma and Sir Quintin the Cat are so happy.  May you have just as happy of a weekend friends!
