Happy St. Patrick’s Day friends! It is one of Grandma’s favorite holidays, despite the fact that we don’t have a drop of Irish blood in us. She *loves* the corned beef and cabbage, she loves that everything is green (especially food) and will basically put green dye in everything (especially food).  Hence these bars.

You may look at these bars and think they’re a lime or pistachio bar of some sort. Oh no my friends, these are lemon bars. Dyed green (see above). I was tasked with making the dessert for our St. Patrick’s Day dinner. I also happened to have two gigantic lemons from my parents’ lemon tree in Arizona. When I asked Grandma what she wanted me to bake her answer was anything I wanted, though I should probably use those lemons sitting on my counter and to make sure to use green dye. My response was something along the lines of “You want me to dye a lemon dessert green?” To which she looks at me and simply says “Why not?”

Grandma’s logic is not something to be trifled with people.

For the record, the above bars are the Lemon Bar recipe from I Am Baker and they’re AMAZING.  Even when they’re green. I pray she forgives me for such a transgression.

This Shamrock Shake recipe looks rather unbelievable and Grandma and I seriously discussed whether I should make this for our St. Patrick’s Day dessert before the lemons on my counter made the decision for us.

I’ll be making my Aunt Merri’s Mile-High Biscuits for our St. Patty’s Day meal as well. Recipe coming Monday.

Finally, Grandma came over this week to visit and bonded with my soon-to-be-foster-fail-cat Quintin.  My heart exploded.
